About us
Margo started her career in plant science when she was 8 years old while grafting fruit trees with her grandfather. She went on to graduate from Cornell University with a bachelor’s degree in plant science. Her dream of a farm in the Azores grew from childhood visits to Faial where animals and nature were far and wide. Over the years she has spent time working on farms from Massachusetts, Greece and all the way to New Zealand where she specialized in production farming, agroforestry systems, and organic practices.
Manny Largo started his culinary career in New York City working for Bobby Flay at Mesa Grill. Shortly thereafter he attended Johnson and Wales and pursued a degree in culinary arts. Since then, Manny has apprenticed and worked at some of the most prestigious restaurants in the United States. His dishes are all made from scratch practicing techniques that he has refined throughout his career and always using the best vegetable varieties from the test farm.
The farm and eira have been in the family for over a century with the land being fallow for over 50 years. Margo and Manny have turned this family heirloom into a variety test farm, where they test over 100 varieties of plants during each growing season. They diligently compare varieties of vegetables and select for flavor, appearance, and resistance. The vegetables are harvested for the farmer’s market and utilized by Manny to create artisanal farm to table meals for our guests.
